Gooey Shakeology Oatmeal Bars


(Makes 12 servings, 1 bar each)

Prep Time: 10 min.
Total Time: 3 hrs. 10 min.

4 scoops Chocolate Shakeology
3 cups old-fashioned rolled oats
1 tsp. unsweetened cocoa powder
1 dash ground cinnamon
1 cup nonfat milk
1/2 cup all-natural peanut butter
1/2 tsp. pure vanilla extract
Nonstick cooking spray
(You can add in a 1/4 cup of protein powder) Optional

Combine Shakeology, oats, coca powder, and cinnamon in a large bowl; mix well. Add milk, peanut butter, and vanilla extract; mix well with a rubber spatula or by hand. Place
in an 8 x 8-inch pan that is lightly coated
with spray. Cover with plastic wrap
and press down to flatten into pan.

Refrigerate for 3 hours. Cut into twelve
bars.

I made these and stored them in the freezer.
They are gooey, REALLY GOOD and seemed to hold together
better after being stored in the freezer.

Why do you use a mason jar instead of a plastic container? 

Here are a few reasons: 
1) Using the mason jar allows you to add the dressing into your salad which is convent when traveling around to work or other places. You don't have to pack that separately. 
2) The mason jar seems to keep the food fresh for a long period of time. You get a better seal with the jar. You can have a mason jar salad 5-6 days post making it. 

Layer 1: The Dressing

The first layer of the Mason Jar is always the dressing. You can use any type of dressing you like. I prefer a vinaigrette dressing but you can use a creamy ranch. It depends on what you like. The vinaigrette will come out of the mason jar easier. 

Here I used 2 tablespoons of dressing. You can use a little more depending on your preference.
I'll show which type of dressing I used down below. 


Layer 2: Hearty Vegetables 

It's important to layer this second because these veggies shield the dressing from the lettuce and meat. You can pick veggies that will taste good in a dressing marinade such as carrots, tomatoes, bell peppers, cucumbers, broccoli, asparagus, celery to name a few. You can add in any others you'd like. Some people (like my husband) do not like tomatoes at all but I think they are a great second layer.  

Layer 3: Beans and Other Less Hearty Veggies 
This layer is where you put less hearty veggies like green beans, corn, mushrooms, zucchini or sprouts. If some dressing reaches this it won't be too bad. 

Layer 4: Pasta and Grain Layer

This layer is for pasta noodles if you'd like to add them to maybe an Italian salad. You can add quinoa or rice here as well for a mexican salad. 

Layer 5: Protein and Cheese 

In this layer you can add eggs, bacon bites, any type of cheese, chicken or any meat. You don't want these laying in dressing for 3 days as they will become soggy. 

Layer 6: Lettuce, Seeds, and Nuts

In this layer you'll want to add ingredients that would become soggy if they touched the dressing.

21 Day Fix Approved Scrumptious Oatmeal

This is my favorite go-to breakfast that I know is healthy, quick and scrumptious!



  • 1/2 cup of Rolled Oats(Yellow)
  • 1 cup of Berries (Purple)
  • 1 tsp of Pure Maple Syrup
  • Dash of Cinnamon 
Bring 1 cup of water to boil. Then add rolled oats and boil for 5 minutes over medium heat. 

I also boil, scrabble or how ever I feel like making it that day... 2 Eggs(Red)

Finally I steam 1 cup of Spinach (Green)
and add a dash of pink Himalayan salt

I WOULD NOT eat and LOVE the steamed spinach if it wasn't for the Himalayan salt. You can get that at your local famers market and some grocery stores. This completes my 21 DAY FIX breakfast for the day. Enjoy! 

Leadership Retreat


I spent 3 incredible days at our Coaches Retreat in Castle Rock, Colorado just a few weeks ago!!

These are my friends and fellow leaders/coaches on our Beachbody team getting a workout by one of our very own instructors.

This was one AMAZING all expenses paid, retreat to celebrate and also learn how to better help others with health, fitness and coaching.
The friendships and knowledge gained here are priceless to me! I'm thankful to be able to share this opportunity with other busy people like myself who want MORE in their life.

I LOVE raising my kids at home but always desired to be doing something MORE alongside of my first priority (my family). This has been the most fulfilling, rewarding, growing and challenging career I could have ever dreamed of.
