Chicken and Spinach Scrambler



This high-protein scramble with chicken, spinach, and avocado is the perfect power meal to start your day. It has a whopping 49 grams of protein to help you build and repair muscle. Or have it for dinner! 
Total Time: 18 min.
Prep Time: 10 min.
Cooking Time: 8 min.
Yield: 1 serving
Ingredients:
1 large egg
4 large egg whites (½ cup)
Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)
Nonstick cooking spray
1 cup fresh baby spinach
3 oz. cooked chicken breast, boneless, skinless, chopped
1/6 medium avocado; thinly sliced
Preparation:
1. Combine egg and egg whites in a medium bowl; whisk to blend.
2. Season with salt and pepper, if desired; whisk to blend. Set aside.
3. Heat medium nonstick skillet lightly coated with spray over medium-low heat.
4. Add spinach; cook, stirring frequently, for 3 to 4 minutes, or until wilted.
5. Add egg mixture; cook, stirring constantly, for 3 to 4 minutes, or until almost set.
6. Add chicken; cook, stirring frequently, for 2 to 3 minutes, or until eggs are set.
7. Top with avocado; serve immediately.
